INGREDIENTS

  • Β½ Cup Pumpkin PureeΒ 
  • 4 tbsp Peanut Butter
  • 1 tbsp Pumpkin Spice
  • Pinch of SaltΒ 
  • 2 packed scoops (60g) Tri-Blend Pumpkin ProteinΒ 
  • 1/3 - 1/2 cup Chocolate ChipsΒ 
  • 1-2 tsp Coconut OilΒ

DIRECTIONS

  1. Combine pumpkin, peanut butter, pumpkin spice and salt togetherΒ 
  2. Add in Tri-Blend Protein and mix well to combineΒ 
  3. Form dough into balls (I used a tablespoon) and place on a parchment lined baking sheet and freeze for 10-20 minutes to hardenΒ 
  4. While the dough is freezing, melt the chocolate chips and coconut oil in a small bowl - Microwave in 15 sec. increments until melted.Β 
  5. Dip the buckeyes into the melted chocolate and use a spoon to coat and create the signature buckeye look.Β 
  6. Let cool in the fridge until the chocolate hardens and ENJOY!
