Satisfy Your Sweet Tooth with Tri-Blend S'mores Protein Blondies w/ Coach Kiki

Packed with Max Effort's Tri-Blend S'mores Protein, Greek yogurt, and more, you can now get your protein fix in style (and taste). The result? A gooey, marshmallow-studded center nestled between layers of crushed graham crackers and chocolate chips.
INGREDIENTS:
- 3/4 cup AP Flour
- 1/4 cup Truvia Stevia (or other low calorie sugar replacement)
- 2 tbsp Truvia Brown Sugar
- 1/2 tsp Baking powder
- 1/4 tsp baking soda
- 1/8 tsp salt
- 1/2 cup Plain Greek Yogurt (i used nonfat)
- 1 individual unsweetened applesauce container (or 1/2 cup)
- 1 tsp vanilla extract
- 2 tbsp Light Butter (like, I can't believe it's not butter)
- 2 tbsp Powdered Peanut Butter (mixed with 1-2 tbsp water)
- 2 scoops Max Effort Tri-Blend Protein (I used S'mores but vanilla or vanilla PB would work too!)
- 2 sheets Graham Crackers (crushed)
- 5-6 marshmallows (I cut up full size, but you could replace with either (3/4 cup mini marshmallows OR ~6tbsp marshmallow creme)
- 2-3 tbsp mini chocolate chips (measure with your soul
DIRECTIONS
- Preheat oven to 325 and spray an 8x8 pan with nonstick spray
- Combine all dry ingredients together (minus the tri-blend)
- Mix in the wet ingredients
- Finally add in Tri-Blend Protein and combine until smooth
- Fold in the crushed graham crackers and chocolate chips into the batter
- Pour 3/4 of the batter into the prepared dish
- Evenly distribute the marshmallows on top and then add the remaining batter on top of that layer.
- Sprinkle with any remaining graham crackers/chocolate
Bake for 25 minutes - the center should be slightly gooey
Let cool for 30 minutes to give them time to set
Cut into bars and enjoy! (Keep leftovers in fridge)
