Pumpkin Spice Meets Protein Power π πͺ
Fall cravings hit differentβespecially when pumpkin spice season rolls around. The problem? Most pumpkin treats pack more sugar than substance. These Pumpkin Oatmeal Protein CookiesΒ flip the script: cozy, chewy, pumpkin-packed, AND loaded with protein so you can crush cravings andΒ stay on track.
Ingredients:
Β½ Cup Instant Oats
1β2 scoops Max Effort Protein Powder (Whey orΒ Plant both work!)
1.5 tsp Pumpkin Pie Spice
1 tsp Baking Powder
Pinch of Salt
2 tsp Light Butter (or coconut oil/regular butter)
ΒΌ cup + 2 tbsp Pumpkin Puree
1 tsp Vanilla Extract
ΒΌ Cup Sugar-Free Syrup (or regular Maple Syrup)
Directions:
Whisk together dry ingredients.
In another bowl, mix butter, pumpkin, and vanilla. Stir in syrup.
Combine wet + dry until just incorporated.
Chill dough for 30 minutes.
Preheat oven to 325Β°F. Line a baking sheet with parchment or use silicone molds.
Drop dough in rounded scoops or portion evenly into molds.
Bake 10β13 minutes. Let cool.
